200g Violife block with mature cheddar flavour, grated

6 small sweet potatoes

1 cup cashews, soaked in water for minimum 1 hour

½ cup unsweetened coconut milk

1 tsp salt

½ tsp pepper

1/8 tsp nutmeg

1 tsp garlic

1 cup vegetable broth

1 tbsp fresh lemon juice

2 tbsp coconut oil (1 tbsp to grease your pan and 1 tbsp melted and poured over your sliced potatoes to help the seasonings stick)

½ cup fresh parsley as garnish

Hazelnuts to garnish (optional)

Directions

At least 1 hour before making the gratin, soak your cashews in the vegetable broth.

Preheat your oven to 200oC.

Grease a baking dish with coconut oil.

Slice sweet potatoes into very thin circles and place into a large mixing bowl tossing with coconut oil, salt and pepper and chopped garlic.

Blend your cashews and their water in a blender with the nutmeg, lemon juice and coconut milk until creamy. Grate the Violife Block with Mature Cheddar Flavour. Add ¾ of the grated Violife and stir. Mix the sweet potatoes into the mixture gently.

Layer your sweet potatoes vertically along the bottom of the greased pan (overlap your potatoes). Pour over the broth and sprinkle with remaining grated Violife.

Place your gratin in the oven and bake for 1 hour or until the top is golden brown.

Let it rest at room temperature for about 10 minutes to allow the gratin to set-up.

Garnish with fresh parsley and roughly chopped hazelnuts.

FOR 8 MINI BURGERS

4 slices Violife with Mature Cheddar Flavour

200g Violife Mediterranean Style

8 mini burgers bans

3 large potatoes

2 carrots, grated

1 leek, sliced

1 onion, chopped

1 garlic clove, chopped

Valeriana leaves

2 small tomatoes, sliced

Fresh basil and thyme, chopped

Olive oil

Salt & pepper

FOR THE AVOCADO SPREAD

1 ripe avocado

50 ml olive oil

juice from 1 lime

Salt and freshly ground pepper

Directions

1. Wash up the potatoes, making sure there is no dirt left on the skin. Cover them with foil and put them in the oven/microwave for 15-20 minutes, until they become very soft. When they are ready, remove the skin and mash them with a fork in a bowl.

2. Grate the carrots, slice the leeks, onion and garlic.

3. In a frying pan sauté leek, carrots, onion and garlic with a bit of olive oil until they become soft. Remove pan from the heat, add basil and thyme and blend with the rest of the ingredients.

4. Add the sautéed veggie mix with a bit of olive oil, salt and pepper to the mashed potatoes and hand-mix all ingredients together until it becomes a dough-like mix.

5. Form the mixture into 8 mini patties and sauté them in a frying pan with a bit of olive oil.

6. Remove the Violife Mediterranean Style blocks from the pack. Place on a very hot griddle pan and grill for 2 minutes on each side.

7. Remove from the pan, place on a cutting board and cut each block in quarters.

8. For the avocado spread: Cut a very ripe avocado in half. Scoop out the flesh and add it to a small blender with olive oil, lime juice, salt and pepper. Beat until the mixture is smooth and creamy.

9. Start putting together your burgers in the following order:

Bottom burger ban – avocado spread – veggie pattie – Violife slice with mature cheddar flavour or Violife Mediterranean Style slice – tomato slice – valeriana leaves – top burger bun

200G VIOLIFE WITH MATURE CHEDDAR

FLAVOUR GRATED

1KG BABY POTATOES

100G MARGARINE

2 GARLIC CLOVES SLICED

1 TBSP THYME

1 TBSP ROSEMARY

CHIVES

2 TBSP SWEET PAPRIKA

EXTRA VIRGIN OLIVE OIL

SALT & FRESHLY GROUND PEPPER

Directions

Wash the potatoes and boil for 10’, until they become a bit soft. Remove pot from the heat and set aside for 5 minutes, before you cut them in half.

In a medium sized frying pan, add a bit of olive oil and margarine. Add the potatoes and sauté slightly. Place them in a bowl and add thyme, rosemary, garlic, chives, paprika and salt.

Mix carefully using your hands, making sure the potatoes don’t get spoiled. Place the potatoes in an ovenproof dish and sprinkle with grated Violife with mature cheddar flavour.

Bake in a preheated oven at 220º C, until the Violife melts. Before serving, sprinkle with finely chopped chives.

Violife slices with mature cheddar flavour (4 slices)

4 burger buns

3 large potatoes

2 carrots, grated

1 leek sliced

1 onion, chopped

1 garlic clove, chopped

4 lettuce leaves

2 sliced tomatoes

Fresh basil and thyme, chopped

Vegan barbecue sauce

Olive oil

Salt & pepper

Directions

Wash and peel the potatoes, cut into small cubes and boil for 15 minutes until soft. Once they’re soft, drain them, add a dash of olive oil, and mash in a bowl. Meanwhile, heat a little olive oil in a frying pan, and sauté the leeks, carrots onion and garlic until they’re slightly soft. Remove the pan from the heat, and stir in the basil and thyme.

In a large bowl add the veggie mix along with a little olive oil, salt and pepper to the potatoes and mix them together by hand into a lovely dough-like mix. Form into 4 patties and sauté gently on a medium heat in a little olive oil.

Lightly toast or grill your burger buns, then spread with a little barbecue sauce. Then stack the lettuce, tomato, your patty topped with a few Violife slices with mature cheddar flavour and crown with a few rings of onions and any leftover herbs. Delicious!
